Eating well after work meant either an hour in the kitchen or ordering in. Soup solved it, provided it was made properly and frozen in portions rather than sold by the litre.
Every recipe is developed by hand and every batch is still small, cooked and frozen the same day. That is why nothing needs preserving: the freezer does the work that additives usually do.
And the name? Feta In The Oven. My college roommate and I lived by it: feta baked until the edges turn golden, spooned onto every bowl of soup. FITO became part of our own little dictionary, so it had to be the name.
